Tradition, Reimagined

Tsalafouti was born as a rustic mountain cheese, traditionally recognised for its pronounced acidity. Papathanasiou respected this heritage but reimagined its expression for contemporary gastronomy. Through knowledge, precision and exceptionally fresh sheep’s milk, we created a Tsalafouti that is sweeter, rounder and more refined, preserving the soul of tradition while opening an entirely new chapter for this historic Greek cheese.
