Roasted Beet Salad with Feta and Walnuts
Ingredients:

12 medium beets, peeled and cut into wedges

6 tablespoons olive oil

Salt and pepper to taste

3 cups crumbled Feta π

1 cup walnuts, toasted

1/2 cup fresh parsley, chopped

4 tablespoons balsamic vinegar

4 tablespoon honey

Mixed greens
Instructions:

Roast the Beets: Preheat the oven to 400°F (200°C). Toss the beet wedges with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 30-35 minutes, or until tender. Let them cool slightly and cut them in 6.

Prepare the Salad: In a large bowl, combine the roasted beets, the mixed greens, the crumbled Feta, toasted walnuts, and fresh parsley.

Make the Dressing: Whisk together the balsamic vinegar and honey in a small bowl. Drizzle over the salad and toss to coat.
