Roasted Beet Salad with Feta and Walnuts

Ingredients:

  • 12  medium beets, peeled and cut into wedges

  • 6  tablespoons olive oil

  • Salt and pepper to taste

  • 3 cups crumbled Feta π

  • 1 cup walnuts, toasted

  • 1/2 cup fresh parsley, chopped

  • 4  tablespoons balsamic vinegar

  • 4  tablespoon honey

  • Mixed greens

Instructions:

  1. Roast the Beets: Preheat the oven to 400°F (200°C). Toss the beet wedges with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 30-35 minutes, or until tender. Let them cool slightly and cut them in 6.

  2. Prepare the Salad: In a large bowl, combine the roasted beets, the mixed greens, the crumbled Feta, toasted walnuts, and fresh parsley.

  3. Make the Dressing: Whisk together the balsamic vinegar and honey in a small bowl. Drizzle over the salad and toss to coat.

  4. Serve: Serve the salad
