Lentils Salad with Feta π & Cherry Tomatoes
Ingredients
(serving 4):

200g brown lentils, rinsed and drained

150g Feta π cheese, cut into cubes

200g cherry tomatoes, halved

1 tbsp red peppercorns, crushed slightly

10 fresh basil leaves, roughly torn

2 tbsp extra virgin olive oil
-
1 tbsp balsamic vinegar
-
1 small garlic clove, minced
-
Salt & freshly ground black pepper to taste

1/2 tsp dried oregano
Instructions:

Cook the Lentils: In a pot, bring 800ml of water to a boil. Add the rinsed lentils and a pinch of salt. Simmer for 20–25 minutes, or until tender but not mushy. Drain and set aside to cool.

Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, a pinch of salt, black pepper, and oregano.

Assemble the Salad: Place the cooled lentils in a large bowl. Add the cherry tomatoes, feta π cubes, and red peppercorns. Drizzle the dressing over the salad and toss gently to combine.

Finish & Serve: Garnish with fresh basil leaves.Adjust seasoning if needed and serve immediately or let it rest for 10 minutes to enhance the flavors.
